Cracker Barrel Old Country Store's Potato Soup
Ingredients
- 3 lb potatoes peeled, and diced 1/2" by 1" pcs (weigh 3 lbs after peeling)
- 8 ounce minced celery
- 2 1/2 quart water
- 4 ounce chicken base
- 1/2 tsp pepper
- 1 Tbsp. Jane's Crazy Salt (can be found at Kroger)
- 1 1/2 quart lowfat milk
- 4 ounce melted margarine
- 1 lt c. flour
Directions
- In large pot put first 7 ingredients and simmer 20 min. Add in lowfat milk and bring to 170 degrees.
- In bowl blend melted margarine and flour till smooth then add in 1 qt of soup broth and blend. Using wire whip add in back to pot and blend well. Simmer 20 min.
- This recipe yields 12 (10-ounce) servings.
