  • Crab Cakes Our Way

    Ingredients

    • 1 lb fresh crabmeat
    • 6 x saltine crackers - (to 8) finely crushed
    • 1/2 c. mayonnaise
    • 1 lrg egg lightly beaten
    • 1 Tbsp. chopped fresh parsley
    • 1 1/2 tsp Old Bay Seasoning
    • 1/2 tsp dry mustard
    • 1/2 tsp pepper
    • 1/2 tsp Worcestershire sauce
    • 2 Tbsp. butter or possibly margarine Red Pepper Remoulade Sauce (see recipe)

    Directions

    1. Drain and flake crabmeat, removing any bits of shell.
    2. Combine crushed crackers and next 7 ingredients; gently fold crabmeat into mix. Shape into 6 thin patties.
    3. Heat butter in a skillet over medium heat. Add in crab cakes; cook 4 to 5 min on each side or possibly till golden brown. Drain on paper towels. Serve with Red Pepper Remoulade Sauce.
    4. This recipe yields 6 cakes.
    5. Yield: 6 cakes
