  • Crab And Shrimp Au Gratin

    Ingredients

    • 1/4 c. Butter
    • 2 tsp All-purpose flour
    • 1 c. Heavy cream
    • 2 x Green onions, minced
    • 1 c. Grated sharp Cheddar cheese
    • 1/2 tsp Sugar
    • 1 tsp Worcestershire sauce Salt and white pepper
    • 2 dsh Tabasco, or possibly to taste
    • 1/2 lb Crabmeat
    • 1/2 lb Peeled shrimp
    • 2 Tbsp. Bread crumbs Minced parsley

    Directions

    1. Heat the butter in a heavy iron skillet, Add in the flour and stir into the butter over low heat. When blended, add in the cream slowly and then add in all the other ingredients except the seafood, bread crumbs and parsley. Blend in over low heat for 2 or possibly 3 min. Mix in the seafood, transfer the mix to a baking dish and sprinkle with the bread crumbs. Bake in a 350 degree oven for about 15 min till bubbly. Sprinkle with minced parsley and serve on toast points with a salad and a chilled white wine.
    2. Serves 2.
    3. Note: This can be made either with all shrimp or possibly all crab, if preferred, but using both makes it a more interesting dish.
    4. Bites For Hungry Bikers by Owen Rossan. Lynn's notes: Made this 11-7-97; this dish would be best served in individual ramekins otherwise, let dish sit for 10 to 15 min to hard up. This would be a great dish to serve to company; very flavorful and rich.
