  • Coyote's Paprika Chicken Chili

    Ingredients

    • 1/2 x White onion diced
    • 1/2 x Purple onion diced
    • 4 x Cloves of garlic chopped
    • 1 lrg Red bell pepper diced
    • 1 x Red jalapeno sliced and diced
    • 1 1/2 lb Chicken barest (without skins) cubed
    • 1 Tbsp. Cumin
    • 1 Tbsp. Mexican Oregano
    • 1 ounce California chile pwdr
    • 1 ounce Sweet paprika
    • 1 dsh Seasoned salt
    • 1 lb Roma tomatoes diced
    • 4 c. Chicken broth
    • 1 1/2 c. Gewurztraminer wine Extra virgin olive oil

    Directions

    1. In large pot saute/fry the jalapeno, onions, bell pepper and 3 cloves of garlic with extra virgin olive oil till onions are translucent/soft. In a large frying pan, heat extra virgin olive oil add in 1 clove of garlic cook slightly then add in the chicken and sprinkle with a dash of seasoned salt and "brown" the chicken. Next add in 1/2 c. wine to chicken and simmer for a few min. In the large pot with the onions mix, add in 4 c. chicken broth and 1 c. wine, then bring to a slight boil for 5 min. Add in the diced tomatoes.
    2. After 5 min reduce to a simmer, add in the chile powders, cumin and oregano. Let pot simmer for at least 2 hrs. Add in flour & water mix if you wish to make the chili thicker.
    3. Serve with minced chiles,minced onions, shredded cheese, and lowfat sour cream and sour dough bread.
