  • Cowboy Steaks In A Skillet

    Ingredients

    • 2 Tbsp. Extra virgin olive oil
    • 1 tsp Coarse salt
    • 1 lrg Onion, sliced
    • 2 lrg Garlic cloves, minced
    • 2 Tbsp. Minced fresh cilantro
    • 1 Tbsp. Plus 1 tsp. chili pwdr
    • 1/4 tsp Dry crushed red pepper
    • 1 Tbsp. Water
    • 2 x Poblano chilies, seeded, sliced
    • 2 x New York strip steaks, (about 1 inch thick), trimmed (8-oz) Additional minced fresh cilantro

    Directions

    1. Heat oil and salt in heavy large skillet over medium-high heat. Fold in onion, garlic, 2 Tbsp. cilantro, 1 Tbsp. chili pwdr and crushed red pepper. Add in 1 Tbsp. water. Cover skillet and cook onion mix 5 min, stirring occasionally. Uncover and continue cooking till onion is tender and golden brown, stirring frequently, about 3 min. Add in chilies and saute/fry till tender about 6 min.
    2. Transfer onion mix to plate.
    3. Rub each steak with 1/2 tsp. chili pwdr. Season with salt and pepper. Increase heat to high and add in steaks to same skillet. Cook as desired, about 6 min per side for medium-rare. Transfer to platter. Top steaks with cilantro. Surround with onions and chilies and serve immediately.
    4. Serves 2.
