Country Succotash with Smoked Turkey
Ingredients
- 1 bag diced onions
- 1 bag diced celery
- 2 bags okra- frozen
- 2 cans diced tomatoes
- 3 bags succotash
- 1/2 cup cajun spice
- 1/4 cup black pepper
- 1 Tbsp salt
- 6 sprigs bay leaf
- 1/4 cup Worcestershire sauce
- 1/2 cup oil
- 1 whole smoked turkey breast, cut
- 1/4 cup thyme
- 8 oz ham base
- 1 gal water
Directions
- In tilt skillet, heat oil and saute onions and celery until translucent and cooked through, several minutes.
- Add cajun spice, thyme, bay leaf, pepper, worcestershire sauce, ham base, diced tomatoes with juice, and water and cook to reduce by 1/2 the liquid.
- Add succotash, diced turkey meat, and okra. Cook for 15 minutes on low simmer.
- Taste and adjust seasoning if needed. Add salt if required.
- Garnish with chopped parsley.
