  • Country Succotash with Smoked Turkey

    Ingredients

    • 1 bag diced onions
    • 1 bag diced celery
    • 2 bags okra- frozen
    • 2 cans diced tomatoes
    • 3 bags succotash
    • 1/2 cup cajun spice
    • 1/4 cup black pepper
    • 1 Tbsp salt
    • 6 sprigs bay leaf
    • 1/4 cup Worcestershire sauce
    • 1/2 cup oil
    • 1 whole smoked turkey breast, cut
    • 1/4 cup thyme
    • 8 oz ham base
    • 1 gal water

    Directions

    1. In tilt skillet, heat oil and saute onions and celery until translucent and cooked through, several minutes.
    2. Add cajun spice, thyme, bay leaf, pepper, worcestershire sauce, ham base, diced tomatoes with juice, and water and cook to reduce by 1/2 the liquid.
    3. Add succotash, diced turkey meat, and okra. Cook for 15 minutes on low simmer.
    4. Taste and adjust seasoning if needed. Add salt if required.
    5. Garnish with chopped parsley.
