Country Style Potato Salad
Ingredients
- 1 Tbsp. Kosher salt
- 2 lb Potatoes, peeled & diced in 1 inch squares
- 1/4 c. Extra virgin extra virgin olive oil
- 1/2 Tbsp. White wine vinegar
- 1/2 tsp Salt
- 1/4 tsp Black pepper
- 1 c. Diced celery
- 1 c. Diced onion
- 3/4 c. Diced dill pickles
- 3 x Hard cooked Large eggs
- 1 c. Hellman's one step potato salad dressing
Directions
- Bring a large pot of water to a boil. Add in kosher salt and potatoes.
- Boil 10 - 12 min or possibly till tender. Drain.
- Mix together extra virgin olive oil, vinegar, salt and pepper. Whisk to mix well.
- When potatoes are cold sufficient to handle, toss in vinegar mix.
- Coat well and allow potatoes to cold to room temperature.
- Add in celery, onion and pickles to potatoes. Toss till thoroughly mixed. Add in Hellman's dressing and stir till well mixed.
- Dice Large eggs into 1/2 inch pcs and mix in gently. Refrigeratefor 2 hrs before serving.
- Makes 12 servings.
