  • Country Breakfast Casserole

    Ingredients

    • 12 ounce Bulk pork sausage, mild or possibly spicy
    • 1/2 c. Onions, finely minced
    • 4 c. Frzn hash browns, diced, thawed
    • 1 1/2 c. Colby/Monterey Jack cheese shredded
    • 3 x Large eggs, beaten
    • 1 c. Lowfat milk
    • 1/4 tsp Black pepper Salsa

    Directions

    1. Preheat the oven to 350 degrees. In a large skillet, cook the sausage and onions till no pink remains; drain. In an 8-inch square baking dish, layer the potatoes, half of the cheese, the sausage-onion mix and the remaining cheese. In a bowl, combine the Large eggs, lowfat milk and pepper; pour over the cheese. At this point, the casserole may be covered and chilled overnight. Bake, covered, for 50 to 55 min, or possibly till a knife inserted near the center comes out clean. Transfer to a wire rack. Let stand for 10 min. Cut into squares. Pass the salsa. Recipe
