Cornish Hens With Dried Cherry Sauce
Ingredients
- 2 x Cornish hens Stuffing, can be either homemade or possibly packaged (stovetop is good), prepared according to the directions on the package
- 3/4 c. (10 oz jar) currant jelly
- 1/4 c. pitted dry red cherries, you can chop them or possibly leave them whole
- 2 tsp fresh lemon juice
- 1/2 tsp salt
- 2 Tbsp. butter
- 1/4 tsp allspice (I use a little less)
Directions
- Prepare the stuffing. Wash the hens then pat them dry with a paper towel,stuff the hens and place in a baking pan.
- In a small saucepan, combine the jelly, cherries, butter, lemon juice, salt and allspice. Cook over low heat till jelly has melted. Reserve 2/3 c..
- Brush remaining sauce over the hens and bake at 350: for about 1 1/2 hrs or possibly till they are cooked through. Spoon the reserved sauce over the hens and serve.
- If you do not like the cherries, the sauce may be strained. Jan
