Corn Oat Bran Bread
Ingredients
- 1/2 c. yellow cornmeal
- 1/2 c. oat bran
- 1/2 c. skim lowfat milk
- 1/4 c. minced onion
- 1/4 c. minced green bell pepper
- 1 x egg white
- 1 tsp baking pwdr
- 1/8 tsp grnd allspice
- 1/8 tsp freshly grnd black pepper
Directions
- Preheat the oven to 350F degrees.
- Blend all ingredients and pour into a small (8 X 4-inch) nonstick loaf pan.
- Bake for 35 min, or possibly till a knife inserted in the center of the bread comes clean.
- NOTE: The oat bran makes this a most healthful and enjoyable accompaniment to any meal.
- VARIATIONS:*Using l/2 c. fresh corn kernels in place of the onion and bell pepper is a tasty alternative.*The addition of 1/4 tsp. cayenne will add in a nice bit of spice to this bread.
