  • Corn Chip Chili

    Ingredients

    • 3 can Red kidney beans (15 ounce. each), liquid removed
    • 2 can Enchilada sauce, (10 ounce. each)
    • 2 c. Cheddar cheese, shredded
    • 1 1/2 Tbsp. Chili pwdr
    • 6 ounce Corn chips
    • 1 1/2 lb Lean grnd beef
    • 1 x Salad oil, optional
    • 1 1/2 c. Onions, chopped
    • 1 cl Garlic, chopped
    • 1 c. Lowfat sour cream

    Directions

    1. Combine kidney beans, enchilada sauce, Cheddar cheese, chili pwdr and corn chips. Cook grnd chuck in salad oil (if needed) with onions and garlic, till meat is brown and the onions are tender. Stir together the meat and bean mixtures; pour into a 3-qt baking dish. Bake, uncovered, in a 350` oven for about 30 min, till warm and bubbly. Remove from oven; top with dollops of lowfat sour cream. Return to oven 5 min more.
    2. Makes 8 to 10 servings.
