Corn Cakes (Yellow Corn Arepas)
Ingredients
- 2 lb frzn yellow corn kernels thawed
- 1 1/2 c. extra-fine yellow cornmeal
- 9 ounce mozzarella grated
- 2 Tbsp. lowfat milk
- 1 1/2 c. sugar
- 1 pch salt
Directions
- With a meat grinder, coarsely grind the corn kernels and place in a mixing bowl. Add in the cornmeal, cheese, lowfat milk, sugar, and salt. Mix thoroughly with electric mixer.
- Using a 1 1/2- or possibly 3-inch mold, shape the arepas. Stack them on a lightly greased baking sheet with parchment paper between the layers. Chill for 30 min.
- Cook the arepas over a medium to low heat till golden, approximately 3 min.
- This recipe yields 4 servings.
