  • Corn Cakes (Yellow Corn Arepas)

    Ingredients

    • 2 lb frzn yellow corn kernels thawed
    • 1 1/2 c. extra-fine yellow cornmeal
    • 9 ounce mozzarella grated
    • 2 Tbsp. lowfat milk
    • 1 1/2 c. sugar
    • 1 pch salt

    Directions

    1. With a meat grinder, coarsely grind the corn kernels and place in a mixing bowl. Add in the cornmeal, cheese, lowfat milk, sugar, and salt. Mix thoroughly with electric mixer.
    2. Using a 1 1/2- or possibly 3-inch mold, shape the arepas. Stack them on a lightly greased baking sheet with parchment paper between the layers. Chill for 30 min.
    3. Cook the arepas over a medium to low heat till golden, approximately 3 min.
    4. This recipe yields 4 servings.
