Corn Black Bean Salsa
Ingredients
- 15 ounce Black beans, rinsed and liquid removed
- 1 c. Corn, thawed
- 1/2 c. Red bell pepper, minced
- 1/2 c. Cilantro, minced
- 8 whl green olive, sliced
- 3 Tbsp. Lime juice, fresh
- 2 Tbsp. Balsamic vinegar
- 1/2 tsp Cumin, grnd
- 1/4 tsp Salt
Directions
- Combine all ingredients. Store in refrigerator up to 3 days in an airtight container. Yeild: 4 c.
