This is a hearty casserole that could also be served in smaller portions as a side dish this holiday season. Or use your left over ham from a holiday meal! If your diet restricts ham substitute chicken or tuna and enjoy in your own way!

    Ingredients

    • 1 large onion, chopped finely
    • 5 cloves garlic, minced
    • 2 tablespoons margarine
    • ½ teaspoon salt
    • 3 15 ¾ ounce cans corn, drained
    • 1 cup heavy cream
    • 1 cup milk
    • 8 ounces cream cheese
    • 3 tablespoons flour
    • 1 cup shredded Swiss cheese
    • 1 cup shredded sharp Cheddar cheese
    • 1 pound chopped ham
    • ½ cup corn meal

    Directions

    1. 1. Cook onion and garlic with salt in the margarine over medium-high heat in a large skillet until soft.
    2. 2. Add the corn and turn the heat to high. Sear and toast the corn until lightly browned. Don’t let burn!
    3. 3. Meanwhile, over medium heat in a saucepan heat the cream, milk and cream cheese and stir until blended. Keep on low when blended until the corn mixture is ready.
    4. 4. In a large bowl mix the Swiss and Cheddar cheeses with the ham.
    5. 5. Add the groups of ingredients from the stove to the ham mixture at the same time and stir well.
    6. 6. Bake in a greased 9”x12” pan for 30 minutes at 375 degrees.

This was absolutely delicious but was not quick and easy; easy but took time to cut up everything
