Corn and Ham Cheese Casserole

Or use your left over ham from a holiday meal! If your diet restricts ham substitute chicken or tuna and enjoy in your own way! Ingredients
- 1 large onion, chopped finely
- 5 cloves garlic, minced
- 2 tablespoons margarine
- ½ teaspoon salt
- 3 15 ¾ ounce cans corn, drained
- 1 cup heavy cream
- 1 cup milk
- 8 ounces cream cheese
- 3 tablespoons flour
- 1 cup shredded Swiss cheese
- 1 cup shredded sharp Cheddar cheese
- 1 pound chopped ham
- ½ cup corn meal
Directions
- 1. Cook onion and garlic with salt in the margarine over medium-high heat in a large skillet until soft.
- 2. Add the corn and turn the heat to high. Sear and toast the corn until lightly browned. Don’t let burn!
- 3. Meanwhile, over medium heat in a saucepan heat the cream, milk and cream cheese and stir until blended. Keep on low when blended until the corn mixture is ready.
- 4. In a large bowl mix the Swiss and Cheddar cheeses with the ham.
- 5. Add the groups of ingredients from the stove to the ham mixture at the same time and stir well.
- 6. Bake in a greased 9”x12” pan for 30 minutes at 375 degrees.
