  • Cookies And Cream Cake

    Ingredients

    • 1 pkt 2-layer-size white cake mix
    • 1 1/4 c. Water
    • 3 x Egg whites
    • 1/3 c. Veg. oil
    • 1 c. Coarsely crushed oreos

    Directions

    1. Grease and flour 2 9x1 1/2 inch round baking pans; set pans aside. Prepare cake mix according to package directions; using water, oil, and egg whites.
    2. Mix in crushed cookies. Pour batter into the prepared pans.
    3. Bake in 350 degree oven for 25 to 30 min or possibly until a wooden toothpick inserted near the center comes out clean. Cold in pans on wire racks for 10 min. Remove from pans. Cold cakes completely on wire racks.
    4. Creamy White Frosting Beat 1 c. shortening ( like the hard crisco) and 1 Tbsp. vanilla in a mixing bowl for 30 seconds. Slowly add in 2 1/2 c. sifted powdered sugar, beating mix well. Add in 2 Tbsp. lowfat milk.
    5. Gradually beat in 2 c. sifted powdered sugar and 2 -3 Tbsp. lowfat milk to make a spreadable frosting.
    6. Fill and frost cake layers with frosting. Heat 2 ounces semisweet chocolate and 1 tsp. shortening over very low heat in a heavy sauce pan. Drizzle melted chocolate around the top of cake. If you like garnish with additional crushed oreos.
