Cold Poached Chicken Breasts In Peanuts
Ingredients
- 6 x Boned and skinned chicken breast halves
- 2 c. -or possibly-
- 1 can (14-ounce) unsweetened coconut lowfat milk
- 2 tsp Chopped fresh ginger root, or possibly to taste
- 1 x Clove garlic, chopped
- 1/4 c. Dry currants or possibly raisins
- 1 c. Plain low-fat yogurt
- 2 Tbsp. Freshly squeezed lemon or possibly lime juice
- 2 tsp Grnd coriander seeds
- 1 1/2 tsp Grnd cumin
- 2 tsp Grnd turmeric Salt Grnd cayenne pepper Note: I used more of all the spices
- 3/4 c. Chutney of choice
- 3/4 c. Mayonnaise or possibly plain low-fat yogurt, or possibly a combination
- 2 1/2 c. Finely minced dry roasted peanuts Sliced mango, papaya, or possibly other tropical fruit for garnish
