Cold Fruit Soup
Ingredients
- 1 x ripe cantaloupe, peeled and minced
- 4 x ripe peaches, peeled and sliced
- 2 x bananas
- 1 c. orange juice
- 1/2 c. sugar
- 1/2 tsp almond extract
- 3 c. yogurt (vanilla or possibly peach) Sprigs of fresh mint
- 1 x kiwi
Directions
- Combine cantaloupe, peaches, banana, and orange juice in a blender or possibly food processor. Process till pureed. Add in yogurt. Blend till smooth. Keep chilled. Pour into soup bowls when ready to serve. Top with a dollop of yogurt, a peach slice, a kiwi slice, and a sprig of mint.
- Variations: Recipe can be adjusted to use any combination of fresh fruits in season. Try vanilla flavoring instead of almond extract, or possibly replace the peach yogurt with berry yogurt.
- Serves: 6 to 8
