  • Cod Steaks With Herbed Breads Crumbs

    Ingredients

    • 1 x Clove garlic -- chopped
    • 2 tsp Thyme
    • 2 tsp Lemon peel -- grated
    • 1/2 tsp Salt
    • 1/2 tsp Black pepper
    • 1/2 c. Italian bread crumbs
    • 2 Tbsp. Egg whites
    • 4 x 6 ounce
    • 2 Tbsp. Lemon juice Thyme for garish Cod steaks -- 1/2" thick

    Directions

    1. Preheat oven at 450. Prepare a 9 x 13 x 2" baking pan with cooking spray.
    2. In a mixing bowl, combine garlic, thyme, lemon peel, salt, pepper, and bread crumbs. Stir in egg white and mix well; set aside. Wash cod steaks in cool water and blot dry. Place steaks at least 2" apart in prepared pan and brush them with lemon juice. Carefully spoon bread crumb mix over each steak, pressing lightly to adhere. (Try not to get any bread crumb mix in bottom of pan; it will as burn as fish cooks.) Bake till fish barely flakes, about 15 to 20 min. Transfer steaks to platter, garnish with thyme, and serve.
