    Ingredients

    • 1 1/2 cups flour
    • 1 tsp baking soda
    • 1 tsp cinnamon
    • 1/4 tsp salt
    • 1 cup (2 sticks) unsalted butter, softened
    • 1 cup firmly packed light brown sugar
    • 1/2 cup granulated sugar
    • 1 large egg, at room temperature
    • 1 1/2 tsp vanilla
    • 1 1/2 cups rolled oats (not quick cooking)
    • 1 cup sweetened shredded coconut

    Directions

    1. Preheat the oven to 375 F.
    2. In a small bowl, combine the flour, baking soda, cinnamon, and salt.
    3. Set aside
    4. In a large bowl, cream the butter with both of the sugars until smooth, about 2 minutes
    5. Add the egg and vanilla
    6. Beat well
    7. Add the dry ingredients
    8. Mix thoroughly
    9. Stir in the oats and coconut
    10. Drop by rounded teaspoonfuls onto ungreased cookie sheets
    11. Leave several inches between for expansion
    12. Bake for 12-14 minutes or until lightly golden
    13. Cool the cookies on the sheets for 5 minutes
    14. Remove to a wire rack to cool completely
