Coconut Oatmeal Drop Cookies

- 1 1/2 cups flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp salt
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup firmly packed light brown sugar
- 1/2 cup granulated sugar
- 1 large egg, at room temperature
- 1 1/2 tsp vanilla
- 1 1/2 cups rolled oats (not quick cooking)
- 1 cup sweetened shredded coconut
Directions
- Preheat the oven to 375 F.
- In a small bowl, combine the flour, baking soda, cinnamon, and salt.
- Set aside
- In a large bowl, cream the butter with both of the sugars until smooth, about 2 minutes
- Add the egg and vanilla
- Beat well
- Add the dry ingredients
- Mix thoroughly
- Stir in the oats and coconut
- Drop by rounded teaspoonfuls onto ungreased cookie sheets
- Leave several inches between for expansion
- Bake for 12-14 minutes or until lightly golden
- Cool the cookies on the sheets for 5 minutes
- Remove to a wire rack to cool completely
