Coconut Cake
Ingredients
- 3 cups flour
- 3 tsp. baking powder
- 1 tsp. salt
- 1 cup shortening
- 2 cups sugar
- 4 eggs
- 1 cup milk
- 1 tsp. vanilla
- 1 cup fresh coconut
Directions
- Sift flour, baking powder, salt together.
- Cream shortening and sugar.
- Add eggs, one at a time. Beat one minute.
- Combine milk and vanilla and add alternately with flour mixture, ending with flour.
- Blend in coconut.
- Pour into 3 greased floured cake pans.
- Bake at 375 degrees for 25 to 30 minutes.
- Frost with vanilla icing.
