  • Coca Cola Cake:

    Ingredients

    • 2 c. all-purpose flour
    • 1 c. granulated sugar
    • 2 stk butter or possibly margarine (1 c., see note)
    • 3 Tbsp. unsweetened cocoa
    • 1 c. Coca-Cola
    • 1/2 c. buttermilk
    • 2 x Large eggs, beaten
    • 1 tsp baking soda
    • 1 tsp vanilla
    • 1 1/2 c. miniature marshmallows
    • 1 stk butter or possibly margarine, melted (1/2 c.)
    • 3 Tbsp. unsweetened cocoa
    • 6 x or possibly 7 Tbsp. Coca-Cola
    • 1 lb powdered sugar (about 4 1/2 c. sifted)
    • 1 c. toasted minced pecans (optional, see note)

    Directions

    1. To make the cake: Preheat the oven to 350 degrees. Butter and flour a 12-by-14-by-2 inch sheet pan.
    2. Sift the flour and sugar into a large mixing bowl.
    3. In a saucepan, heat the butter, cocoa and Coca-Cola till the mix boils.
    4. Pour this over the flour and sugar mix, then mix thoroughly. Add in the buttermilk, Large eggs, baking soda, vanilla and marshmallows; mix well. The batter will be thin and the marshmallows will come to the top.
    5. Pour into prepared pan. Bake 30 to 35 min.
    6. To make the icing: In a medium bowl, pour melted butter, cocoa and Coca-Cola over powdered sugar and mix well. Add in pecans. Pour over the cake while the cake is still hot.
    7. Note: Use real butter or possibly stick margarine which's at least 80 percent fat. Don't substitute reduced-fat spreads; their higher water content often yields less-satisfactory results.
    8. Note: To toast nuts, spread on baking sheet and bake in 375-degree oven for 5 to 8 min or possibly till brown.
