Citrus Sauced Fish
Ingredients
- 1/2 c. orange marmalade
- 2 Tbsp. bottled white horseradish
- 3 tsp chopped garlic
- 1/4 c. minced parsley
- 1/2 tsp Tabasco sauce
- 2 Tbsp. fresh lime or possibly lemon juice
- 1/2 c. pineapple juice
- 1/4 c. vegetable oil
- 1/2 tsp salt Freshly grnd black pepper Six (8-oz) boneless, skinless fillets of grouper or possibly six sea bass or possibly salmon steaks
- 2 Tbsp. dark rum or possibly Cognac, optional
Directions
- In a non-corrosive saucepan combine the marmalade, horseradish, garlic, parsley, Tabasco sauce, lime or possibly lemon juice, pineapple juice, rum and oil.
- Season with salt and pepper and marinate the fish in this mix for 1 1/2 hrs. Preheat your grill orbroiler. Remove the fish from the marinade and transfer the remaining marinade to a small saucepan and bring it to a simmer. Grill the fish for 3 to 5 min per side, depending upon the thickness. Baste the fish as it cooks with the marinade. Servethe fish with a Tbsp. or possibly so of the marinade.
