Ciopino (Crock Pot)
This is my variation on the traditional Ciopino that I make on the stove top. This one is lighter with a more delicate flavor. Ingredients
- 4 cans tomatoes (basil, oregano, garlic) by hunts
- 1 palm full fresh cilantro
- 1 palm full fresh basil
- grated lemon peel of 1 large lemon
- juice of the grated lemon
- 1 large garlic clove finely chopped
- 1 small shallot finely chopped
- 1/4 cup blush wine
- 9-12 colossal shrimp
- 6-8 large scallops (cleaned of sand)
- 2 cod filets (1/2 inch thick)
- 1 tsp salt
- 1 tsp pepper melange
Directions
- Add the tomato, herb, garlic and shallot and wine in crock pot for 3.5 hours on high.
- Add the seafood and cook for 30-35 minutes longer or until the seafood is cooked thoroughly.
- Enjoy!
