    A GREAT VEGETARIAN LOAF THAT CAN BE A SUBSTITUTE FOR POULTRY ON THE HOLIDAYS OR ANYTIME.

    Ingredients

    • 1 CUP ORGANIC LENTILS, COOKED
    • 1 CUP ORGANIC SOYBEANS, GARBANZO OR CHICKPEAS COOKED
    • 1 TABLESPOON ORGANIC OLIVE OIL
    • 1 CUBE BASIL PESTO, THAWED
    • 3 ORGANIC GARLIC CLOVES
    • 2 TABLESPOONS ORGANIC ONION
    • 1 CUP ORGANIC ALMOND MILK, NO CARRAGEENAN
    • 1 CUP ORGANIC RICE COOKED
    • 2 END SLICES ORGANIC EUREKA BREAD IN CRUMBS
    • 2 - 3 TABLESPOONS ORGANIC WHOLE GRAIN FLOUR
    • 1/4 CUP ORGANIC PECANS, FINELY CHOPPED
    • 1/4 CUP ORGANIC WALNUTS, FINELY CHOPPED
    • 1 ORGANIC EGG, BEATEN
    • 1 TEASPOON BRAGG LIQUID AMINOS
    • 1/2 TEASPOON POULTRY HERB SEASONING
    • A SHAKE OF BRAGG SPRINKLE

    Directions

    1. PROCESS COOKED LENTILS & BEANS IN FOOD PROCESSOR.
    2. PLACE OLIVE OIL, PESTO TO THAW, GARLIC AND CHOPPED ONION IN SAUTE' PAN TO HEAT FOR A FEW MINUTES BUT DO NOT BROWN OR FRY.
    3. ADD ALMOND MILK AND WARM SLOWLY.
    4. PUT RICE AND BREAD CRUMBS IN A LARGE BOWL AND POUR WARMED SAUTEED' VEGETABLE MIXTURE OVER RICE & CRUMBS.
    5. PUT FLOUR IN SAUTE' PAN & STIR CONSTANTLY OVER LOW HEAT UNTIL ITS COLOR IS LIGHT BROWN. ADD CHOPPED NUTS, CONTINUE STIRRING UNTIL THEY ARE WARM, BUT NOT BROWNED.
    6. ADD BEATEN EGG TO WARMED MIXTURE, ADD NUTS & BROWNED FLOUR.
    7. ADD LIQUID AMINOS, POULTRY SEASONING & BRAGG SPRINKLE.
    8. ADD MIXTURE TO LENTILS & BEANS IN NINJA FOOD PROCESSOR AND MIX THOROUGHLY.
    9. POUR MIXTURE INTO AN OILED BREAD PAN OR DIVIDED MINI LOAF PAN (MAKES 6 SMALL LOAVES).
    10. BAKE AT 325 DEGREES F. FOR 30 MINUTES.
