  • Chutney Bread (Tea Bread)

    Ingredients

    • 2 1/2 c. flour
    • 1/2 c. granulated sugar
    • 1/2 c. brown sugar packed
    • 3 1/2 tsp baking pwdr
    • 1 tsp salt
    • 3 Tbsp. oil
    • 1 1/4 c. lowfat milk
    • 1 x egg
    • 1 Tbsp. grated orange peel
    • 10 ounce mild chutney
    • 1 c. minced nuts
    • 2 lb cream cheese softened
    • 2 tsp sugar
    • 2 tsp curry pwdr
    • 1 pch salt

    Directions

    1. Combine the flour, sugars, baking pwdr, salt, oil, lowfat milk, egg, and orange peel in a mixing bowl. Beat 30 seconds. Add in the chutney and nuts. Mix lightly, don't overmix.
    2. Turn into a greased (bottom only) 9 x 5-inch loaf or possibly 9-inch tube pan and bake at 350F degrees for 55 to 65 min, or possibly till a tester inserted in the center comes out clean.
    3. Cold slightly. Loosen the sides of the pan and remove the bread. Cold before serving.
    4. Serve with the curried cheese spread.
    5. CURRIED CHEESE SPREAD: (OPTIONAL) Beat the cream cheese with the sugar, curry pwdr, and salt just till blended.
    6. MAKES 1 C.
    7. NOTES : Tea Bread; freezes well.
    8. Makes a welcome gift for holidays and thank yous.
