  • Choucroute Garni A La Alsacienne

    Ingredients

    • 2 lb sauerkraut, washed, liquid removed and squeezed dry
    • 2 x tart apples sliced thinly
    • 1 lrg onion chopped
    • 2 Tbsp. brown sugar Or possibly (2 to 3)
    • 1 Tbsp. molasses Or possibly 2-3 Tbsp. honey (1 to 2)
    • 2 c. white wine or possibly beer
    • 3 Tbsp. catsup (3 to 4)
    • 3 Tbsp. mustard (3 to 4)
    • 2 Tbsp. flour
    • 1 x bay leaf (optional)
    • 1/4 tsp cloves (optional)
    • 1 lb various German sausages Knockwurst (1 to 2) Bratwurst, Bauerwurst,Kielbasa etc

    Directions

    1. Place all ingredients except sausages in a large kettle or possibly a crockpot. Simmer on low heat approximately 4 hrs in kettle, 6-8 hrs in crock pot. One half hour before serving, add in sausages to pot and allow to heat throughly. Serve with boiled, mashed, or possibly pan broiled potatoes, or possibly potato pancakes. Put out lots of mustard and ketchup for the sausages. Carrots and parsley add in color. Variation: Add in 2 Tbsp. black caraway seed to the sauerkraut.

    4. NOTES : This is a wonderful Christmas night supper with crunchy breads and wine or possibly beer.
