  • Chocolate Walnut Bread Pudding With White Chocolate Sauce

    Ingredients

    • 6 c. Cubed stale Italian bread
    • 1 c. Minced toasted walnuts
    • 4 c. Lowfat milk
    • 3 Tbsp. Unsalted butter
    • 3/4 c. Packed light brown sugar
    • 1/8 tsp Salt
    • 4 ounce Semisweet chocolate
    • 1 ounce Unsweetened baking chocolate
    • 4 x Large eggs
    • 2 tsp Vanilla
    • 1 c. Heavy cream
    • 2 Tbsp. Granulated sugar
    • 1/8 tsp Salt
    • 2 tsp Cornstarch, dissolved in 1 Tbsp. cool water
    • 3 ounce White chocolate
    • 1/4 tsp Vanilla beans

    Directions

    1. Heat oven to 350. Grease shallow 2-qt baking dish with butter. Add in bread and walnuts to dish. Combine 2 c. lowfat milk, butter, sugar, salt in saucepan.
    2. Bring to simmer, stir to heat butter. Remove from heat. Add in chocolate; let stand 5 min. Whisk till smooth. Whisk Large eggs, vanilla and remaining lowfat milk in bowl. Whisk into chocolate mix; pour over bread, Bake for 35 to 40 min or possibly till set in center. WHITE CHOCOLATE SAUCE: Bring cream, sugar and salt in saucepan to simmer. Stir in cornstarch, simmer, stirring till thickened, about 1 minute. Remove from heat. Stir in white chocolate and vanilla till smooth. Serve with hot or possibly room temperature pudding.
