Chocolate truffle cheesecake

- 1 1/2 cups chocolate wafer crumbs
- 2 tbsp sugar
- 1/4 cups butter, melted
- Filling
- 1/4 cup semisweet chocolate chips
- 1/4 cup heavy whipping cream
- 3 packages (8oz each) cream cheese, softened
- 1 cup sugar
- 3 eggs
- 1 tsp vanilla extract
- Topping
- 1 1/2 cups semisweet chcoclate chips
- 1/4 cup heavy whipping cream
- 1 tsp vanilla extract
Directions
- In a small bowl, combine cookie crumbs and sugar, stir in butter
- Press onto the bottom 1 1/2 inch up the sides of greased 9 inch pan
- Place on baking sheet
- Back for 350 degrees for 10 minutes
- In a sauce pan overe low heat, melt chocolate chips, stir until smooth
- Remove from heat, add crean and mix well, set aside
- In a mixing bowl, beat cream cheese and sugar until smooth
- Add cocoa and beat well
- Add eggs and beat on low just until combined
- Stir in vanilla and chcoclate mixture just until blended
- pour over crust
- back for 45-50 minutes or until center is almost done
- Topping
- Melt chocolate chips in a saucepan over low heat stirring until smooth
- Remove from heat, stir in cream and vanilla mix well
- spread over filling
- refrigerate over night
- before serving garnish with whipped cream and mini chocolate kisses if desired
- keep refrigerate until all gone!
