  • Chocolate Swirl Cheesecake

    Ingredients

    • 1 pkt Famous Chocolate Wafers (9 ounces or possibly 2 1/2 c.)
    • 6 Tbsp. Soy margarine, melted
    • 1/4 c. Sliced almonds
    • 16 ounce Light cream cheese
    • 10 1/2 ounce Hard silken tofu
    • 4 x Large eggs
    • 3 Tbsp. Lemon juice
    • 1 1/4 c. Sugar
    • 16 ounce Light lowfat sour cream
    • 1/3 c. Sugar
    • 1 tsp Vanilla
    • 1/8 c. Chilled chocolate syrup

    Directions

    1. Preheat oven to 350 degrees. In food processor bowl, process crumbs. Add in almonds and margarine and process. Spread proportionately across bottom and up sides of a 10-inch springform pan. Press onto bottom & up sides of pan.
    2. In clean processor bowl, combine cream cheese and tofu with sugar till smooth. Add in four Large eggs and lemon juice. Process till smooth. Pour the filling over the crust and bake for 50 min. Remove cheesecake from oven. Reduce heat to 300 degrees. Mix lowfat sour cream, remaining sugar and vanilla. Spread over cheesecake. Drizzle chocolate syrup over top of lowfat sour cream and gently marble. Bake for 20-25 min. Cold for one hour, then chill overnight. Serve plain or possibly top with fresh fruit.
    3. Yields10 servings. Tip: Look for chocolate wafers in the ice cream toppings section of your supermarket.
