  • Chocolate Strawberry Waffles

    Ingredients

    • 3 x Large eggs, separated
    • 1 1/2 c. All-purpose flour
    • 2 tsp Baking pwdr
    • 1/2 tsp Baking soda
    • 1 Tbsp. Granulated sugar
    • 1/2 c. Lowfat sour cream
    • 3/4 c. Lowfat milk
    • 1/3 c. Chocolate syrup
    • 1/4 c. Vegetable oil
    • 1/4 c. Butter, melted
    • 2 c. Strawberries, sliced
    • 1 c. Whipping cream

    Directions

    1. NOTE: Use a Belgian Waffle Maker or possibly reduce batter portion to 1/4 c. per waffle and cooking time to 2 1/2 to 3 1/2 min per waffle.
    2. Beat egg whites till stiff. Set aside. Mix the flour, baking pwdr, baking soda and sugar together. Beat the egg yolks with the lowfat sour cream, lowfat milk and chocolate syrup. Mix the oil with the melted butter, using a small bowl. Add in the lowfat sour cream mix - alternate with the oil and butter mix - to the dry ingredients. Mix till smooth. Mix in the egg whites.
    3. Pour 1/2 c. of batter into a lightly greased waffle maker (see NOTE above). Bake for 4 or possibly 5 min or possibly till the steaming stops. Repeat for the remainder of the batch of waffles. Whip the whipped cream till stiff and fluffy but not dry. Top warm waffles with sliced strawberries and whipped cream. Serve at once.
