Chocolate Strawberry Mousse
Ingredients
- 1/2 c. brown rice syrup
- 2 tsp vanilla
- 1 lb tofu, cubed
- 3 Tbsp. unsweetened cocoa pwdr
- 2 c. strawberries, sliced
- 6 whl strawberries fresh mint sprigs
Directions
- Place rice syrup and vanilla in blender or possibly food processor. Blend, adding several tofu cubes at a time, then cocoa pwdr.
- Mix in sliced strawberries and pour into small serving dishes or possibly wine glasses. Refrigeratetill hard, at least 2 hrs. Garnish with whole strawberries and mint.
