Chocolate Rum Dessert
Ingredients
- 6 ounce semisweet chocolate chips
- 3 x Large eggs -- separated
- 2 Tbsp. light rum
- 1/4 tsp almond extract
- 1/4 tsp grnd nutmeg Whipped Cream
Directions
- Heat chocolate over warm water in top of double boiler. Beat egg yolks till thick and lemon colored. Gradually stir about one-fourth of chocolate into yolks, stirring constantly; add in to remaining chocolate, stirring constantly.
- Remove from heat; stir in rum, almond extract, and nutmeg.
- Beat egg whites (at room temperature) till stiff peaks form; gently fold into chocolate mix. Spoon into cordial glasses or possibly demitasse c.. Chill.
- Before serving, top with whipped cream.
- Yield: 4 servings.
