Chocolate Pudding Cakes
Ingredients
- 1 1/2 c. butter - (3 sticks)
- 3/4 c. water
- 12 ounce semisweet chocolate minced
- 1 1/2 c. sugar
- 1 1/2 Tbsp. instant coffee crystals or possibly granules
- 1 pch salt
- 3 Tbsp. dark rum
- 1 1/2 Tbsp. vanilla extract
- 6 lrg Large eggs Vanilla ice cream (optional)
Directions
- Preheat oven to 350 degrees. Butter six 1 1/4-c. souffle dishes or possibly custard c..
- Combine butter and 3/4 c. water in heavy large saucepan over high heat. Bring to boil, stirring till butter melts. Remove from heat. Add in chocolate, sugar, coffee and salt; stir till chocolate melts and mix is smooth. Stir in rum and vanilla. Beat Large eggs in large bowl to blend; gradually whisk in chocolate mix.
- Divide chocolate mix among prepared dishes. Bake till edges of cakes crack slightly but center 2 inches remain soft and glossy, about 25 min. Serve cakes hot, topped with vanilla ice cream, if you like.
- This recipe yields 6 servings.
