Chocolate Peppermint Cheesecake Bites
Chocolate Peppermint Cheesecake Bites have a crunchy chocolate cookie layer on bottom with delicious peppermint chocolate cheesecake and bits of crushed candy cane and chocolate swirls on top. A winning combination for this holiday season! Ingredients
- 2 cups finely crushed chocolate wafer cookie crumbs (about 36 wafers)
- ½ cup butter, melted
- 1 (8 oz.) package cream cheese, softened
- 1 (14 oz.) can Chocolate Flavored Sweetened Condensed Milk
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ teaspoon peppermint extract
- ½ cup semi-sweet chocolate chips
- 3 teaspoons vegetable oil
- 2 tablespoons crushed peppermint hard candies
Directions
- Preheat oven to 325°F. Line 18 muffin cups with foil baking cups. Combine wafer crumbs and butter in medium bowl. Divide mixture evenly into prepared muffin cups, pressing firmly to form crusts. Bake 6 minutes. Cool completely.
- Beat cream cheese in medium bowl with electric mixer on medium speed until fluffy. Beat in sweetened condensed milk, eggs, vanilla and peppermint extract until smooth. Divide evenly over crusts.
- Bake for 20 to 25 minutes or until set. Cool completely. Gently remove foil baking cups.
- Microwave chocolate chips and oil in small microwave-safe bowl on HIGH for 30 seconds. Stir until smooth. Drizzle over cheesecakes. Sprinkle with peppermint candies. Chill 1 hour. Store in refrigerator.
