  • Chocolate Pecan Layered Pie

    Ingredients

    • 1 pkt Jello sugar-free chocolate cook and serve pudding mix (4-serving)
    • 1 1/3 c. Carnation nonfat dry lowfat milk pwdr
    • 2 1/4 c. water
    • 1/4 c. minced pecans (1 ounce.)
    • 1 tsp vanilla extract
    • 1 x Keebler chocolate flavored pie crust (6 ounce.)
    • 1 pkt Jello sugar-free instant chocolate pudding mix 4 serving
    • 1 c. Cold Whip Lite
    • 1 Tbsp. mini chocolate chips (1/4 ounce.)

    Directions

    1. In medium saucepan, combine dry cook and serve pudding mix, 2/3 c. dry lowfat milk pwdr and 1 c. water.
    2. Cook over medium heat, stirring constantly till mix thickens and just starts to boil. Remove from heat.
    3. Stir in pecans and vanilla extract.
    4. Cold 5 min.
    5. Proportionately spread mix over bottom of pie crust.
    6. Cover and chill 30 min.
    7. In medium bowl, combine dry instant pudding mix, remaining 2/3 c. dry lowfat milk pwdr and remaining 1 1/4 c. water.
    8. Mix well using a wire whisk.
    9. Blend in 1/2 c. Cold Whip Lite.
    10. Spread mix proportionately over set pecan layer.
    11. Chill 10 min.
    12. Proportionately spread remaining 1/2 c. Cold Whip Lite over set chocolate layer.
    13. Sprinkle chocolate chips proportionately over top.
    14. Chill at least 1 hour.
