Chocolate Mint Ice Cream Loaf
Ingredients
- 24 graham cracker squares
- 6 tbsp. butter, melted
- 3 tbsp. sugar
- 4 squares Baker's chocolate
- 4 tbsp. water
- 1 teaspoon vanilla
- 1/2 c. pecan pcs
- 1 quart. mint ice cream
Directions
- Soften ice cream at room temperature. Lightly grease side and bottom of large glass loaf pan. Crush crackers with rolling pin.
- In a bowl, thoroughly mix crushed crackers, butter and sugar. Press mix firmly into bottom and sides of loaf pan. At low heat (microwave is quick), heat 2 squares chocolate, 2 Tbsp. water and 1/2 tsp. vanilla together, stirring. Reserve 2 Tbsp. nuts.
- Add in chocolate and nuts to ice cream and swirl for marbled effect. Pour into crust. Heat remaining chocolate, water and vanilla together and drizzle over loaf. Top with pecans. Freeze. Slice to serve. Serves 8.
