Chocolate Meringues
Taste Of Home - Nancy Grace Great for special occasions Ingredients
- 1 cup (6 oz.) semisweet chocolate chips
- 2 egg whites
- 1/2 tsp white vinegar
- 1/2 tsp vanilla or almond extract
- 1/4 tsp cream of tartar
- 1/8 tsp salt
- 1/2 cup sugar
- 1/2 cup flaked coconut
- 1/4 cup chopped almonds
Directions
- In a microwave or heavy saucepan, melt the chocolate chips
- Stir until smooth
- Set aside
- In a mixing bowl, beat the egg whites, vinegar, vanilla, cream of tartar, and salt on medium speed until soft peaks form
- Add the sugar, 1 tablespoon at a time,
- Beat on high until stiff peaks form, about 5 minutes.
- Fold in the melted chocolate until combined
- Fold in the coconut and almonds
- Drop by tablespoonfuls 2 inches apart onto lightly greased baking sheets
- Bake at 350 F for 10-11 minutes or until firm
- Remove to wire racks to cool.
- Store in an airtight container
