  • Chocolate Fromage Blanc Brownies

    Ingredients

    • 1/2 c. butter - (1/4 lb) cut into chunks
    • 6 ounce unsweetened chocolate finely minced
    • 1 1/2 tsp vanilla
    • 2 1/4 c. sugar
    • 5 lrg Large eggs
    • 1 c. all-purpose flour
    • 1/2 tsp baking pwdr
    • 8 ounce fromage blanc (see comments)

    Directions

    1. In a 2- to 3-qt pan over low heat, stir butter and chocolate till melted and blended. Remove from heat and stir in vanilla and 2 c. sugar. Transfer to a bowl. Add in 4 Large eggs, one at a time, beating well after each addition. Stir in flour and baking pwdr just till blended.
    2. In another bowl, mix fromage blanc and remaining sugar and egg till well blended.
    3. Spread half the chocolate mix level in a buttered and floured 9-inch square baking pan. Pour cheese mix proportionately over chocolate. Drop 1/4-c. portions of remaining chocolate mix on top, partially, but not completely, covering cheese mix.
    4. Bake brownies in a 325 degrees regular or possibly convection oven till a wooden skewer inserted in the center comes out with moist crumbs attached, 45 to 50 min. Let cold in pan on a rack for at least 20 min, then cut into 9 squares.
    5. This recipe yields 9 brownies.
    6. Comments: Fromage blanc is a tangy, fresh cheese available in some well-stocked supermarkets and in specialty cheese shops. If you like, substitute 4 ounces cream cheese, at room temperature, and 4 ounces lowfat sour cream; beat together till smooth before using in step 2. Cold brownies completely before wrapping.
