  • Chocolate Coconut Balls

    Ingredients

    • 3 ounce Unsweetened baking chocolate squares
    • 1/4 c. Butter
    • 1/2 c. Sweetened condensed lowfat milk, (not evaporated!!)
    • 3/4 c. Sugar
    • 1/4 c. Water
    • 1 Tbsp. Light corn syrup
    • 1 tsp Vanilla
    • 2 c. Sweetened coconut flakes
    • 1 c. Nuts, minced Powdered sugar

    Directions

    1. 1. In large heavy saucepan over very low heat, heat chocolate and butter.
    2. Add in sweetened condensed lowfat milk, stir to blend, remove from heat.
    3. 2. In small saucepan, stir together sugar, water, and corn syrup. Cook over Medium heat, stirring constantly, till sugar is dissolved. Cook, without stirring, till mix reaches 250* on a candy thermometer, or possibly when dropped into very cool water, forms a hard ball which does not flatten when removed from water.
    4. 3. Remove from heat; stir into chocolate mix. Add in vanilla, coconut and nuts; stir till well blended.
    5. 4. Chill about 30 min or possibly till hard sufficient to handle. Shape into 1" balls; roll in powdered sugar. store tightly covered in cold, dry place.
    6. NOTES : For best results, Don't DOUBLE this recipe.
