Chocolate Chip Cupcakes
This is basically the perfect cupcake. It's like a blend of cake AND cheesecake! Ingredients
- 8 ounce. soft cream cheese
- 1 egg, beaten
- 1 teaspoon salt
- 1 1/2 c. mini chocolate chips
- 3 c. flour
- 2 1/2 c. sugar
- 2 teaspoon soda
- 1/2 c. dry cocoa mix
- 2 c. water
- 1 c. oil
- 2 teaspoon vanilla
- 2 tbsp. vinegar
- 40 cupcake liners
Directions
- Blend the cream cheese, egg, 1/2 c. sugar and a healthy pinch of salt.
- Add in mini chocolate chips. Set aside.
- Mix together flour, 2 c. sugar, soda and cocoa.
- Add in water, oil, vanilla and vinegar.
- Pour this mix into liners.
- In the center of each drop 1 Tbsp. chocolate chip cream cheese mix. Bake at 350 degrees for 25 min.
