  • Chocolate Cherry Muffins

    Ingredients

    • 2 c. unbleached flour
    • 1 Tbsp. baking pwdr
    • 1/2 c. unsweetened cocoa pwdr
    • 1/2 tsp salt
    • 2 x Large eggs
    • 1 c. Almond Breeze (original or possibly vanilla flavor)
    • 1 c. brown sugar
    • 1 stk ( 1/2 c.) butter, melted
    • 3/4 c. canned dark cherries or possibly maraschino cherries, halved Preheat oven to 400 degrees.

    Directions

    1. Mix dry ingredients together in a bowl and set aside.
    2. In a separate bowl, mix together Large eggs, Almond Breeze, sugar and butter till smooth.
    3. Add in dry ingredients and mix till incorporated, then mix in the cherries. Don't overmix.
    4. Place in buttered muffin tins or possibly cupcake papers inside muffin tin. Pour into c. in twelve equal portions and bake at 400 degrees for 15 min, or possibly till toothpick comes out dry upon testing.
