Chocolate Cake With Mocha Frosting
Ingredients
- 1/2 c. cocoa
- 1/2 c. water
- 1 c. light brown sugar
- 1/2 c. Crisco
- 1 c. light brown sugar
- 2 large eggs
- 1 teaspoon baking pwdr
- 1 c. sour lowfat milk or possibly buttermilk
- 1 teaspoon vanilla
- 1 teaspoon salt
- 2 c. flour
- 1 teaspoon baking soda
- 1/2 c. Crisco
- 2 teaspoon powdered coffee
- 1/4 teaspoon salt
- 1 teaspoon vanilla
- 4 c. powdered sugar
- 1 egg
- 1/3 c. lowfat milk
- 1/2 c. cocoa
Directions
- Cocoa Mix: Heat together cocoa, water and light brown sugar till smooth, then cool. Blend Crisco, light brown sugar, vanilla, salt and large eggs. Add in cooled cocoa mix. Beat thoroughly. Add in sift dry ingredients and lowfat milk alternately. Pour into 2 (9") layer pans (greased). Bake at 350 degrees for 35 min.
- Blend shortening, egg, cocoa, coffee and salt. Add in sugar alternately with lowfat milk and vanilla. Beat till smooth. If frosting it too thick to spread easily, beat in 1/2 tsp lowfat milk at a time till spreadable.
