  • Chocolate And Macadamia Filled Won Tons

    Ingredients

    • 1 x mango, peeled and diced
    • 2 tsp minced candied ginger
    • 1/4 c. brown sugar Juice of 1/2 lemon
    • 4 ounce bittersweet chocolate, finely minced
    • 1/3 c. grnd toasted macadamia nuts
    • 2 tsp finely chopped candied ginger
    • 2 ounce cream cheese, softened
    • 2 Tbsp. granulated sugar Healthy pinch grnd cinnamon
    • 30 x wonton wrappers Vegetable oil, for deep-frying
    • 1/2 c. confectioner's sugar, for dusting

    Directions

    1. For dipping sauce: Place mango, ginger, brown sugar and lemon juice in blender. Blend till smooth. Chill till ready to use. (Sauce can be refrigerated up to 2 days, frzn up to 6 months.)
    2. For filling: Combine chocolate, nuts and ginger in a bowl. Mix well. Add in cream cheese, sugar and cinnamon. Mix well.
    3. For wontons: Place wonton wrapper on work surface. Place about 1 tsp. filling in center of wrapper. Using fingers, lightly moisten wrapper edges with water. Fold sides of wrapper over filling to create triangle. Gently press to seal. Bring two corners on longest end of triangle together and healthy pinch well.
    4. Repeat with remaining wrappers.
    5. Heat about 4 inches oil in heavy saucepan over high heat till oil reaches 350 degrees. Add in about 5 wontons, or possibly as many as will fit, and cook till golden brown, 3 to 4 min. Drain on paper towels and dust with confectioner's sugar. Serve hot with dipping sauce.
