Chinese Crockpot Chicken
Ingredients
- 3 lb chicken thighs - (or possibly legs or possibly breasts but dark meat holds up better)
- 1/4 c. Hoisin sauce
- 1/4 c. plum chutney or possibly plum sauce
- 1/4 c. low-sodium soy sauce
- 1 med piece fresh ginger root, about 2" peeled, and thinly sliced or possibly grated Juice of 1 whole fresh lime
- 3 Tbsp. corn starch
Directions
- Mix all ingredients except the chicken in a bowl. Add in the chicken pcs and coat well. Place everything, including the marinade, in crockpot. Cover well. If your lid doesn't give a tight fit, seal the opening with either tin foil or possibly heat resistant plastic wrap. Cook 5 to 6 hrs on LOW. Serve with rice.
