Chilled Strawberry Mint Soup
Ingredients
- 3 1/2 c. fresh strawberries, minced
- 2 c. plain lowfat yoghurt
- 2 c. cranberry juice
- 1/2 c. dry red wine
- 1/2 c. table cream
- 1/4 c. minced fresh mint
Directions
- In a large mixing bowl combine 3 c. of the strawberries, yogurt, cranberry juice, wine, cream and mint.
- In a food processor, puree the mix (in batches, if necessary).
- Refrigerateabout 1 hour before serving. Serve in individual bowls garnished with strawberry slices.
- Note: You can make a variation on this soup by replacing the strawberries with mixed fruit and using white wine instead of red.
