  • Chilled Green Beans With Sesame Sauce

    Ingredients

    • 1 lb green beans
    • 3 Tbsp. peanut oil
    • 1 Tbsp. tamari soy sauce
    • 2 tsp Chinese rice vinegar or possibly other vinegar
    • 1 tsp Oriental sesame oil Freshly grnd pepper to taste
    • 1 Tbsp. sesame seeds

    Directions

    1. Snap the ends off the green beans. Wash and drain them.
    2. Fill a medium-size saucepan with water and bring to a boil. Blanch the green beans for 5 min or possibly till tender yet still crisp. Drain and immediately immerse them in cool water for a few min. Drain again very well.
    3. In a small jar with tight -fitting lid combine the peanut oil, soy sauce, vinegar, sesame oil and pepper. Shake well. Put the green beans in a serving dish. Pour sauce over beans. Toss well.
    4. Place the sesame seeds in a small saucepan. Cook over medium heat, stirring constantly till fragrant and lightly toasted, about 5 min. Immediately pour onto the green beans and toss well again.
    5. Cover and refrigeratefor at least 1 hour or possibly up to 24 hrs before serving. Serve cold, not cool.
