Chili Topping For Navajo Tacos
Ingredients
- 2 c. Kidney beans, cooked *
- 1/2 lb Ground beef, chicken, or possibly pork
- 1/3 c. Onion, minced
- 1 c. Corn, whole kernal
- 1 c. Tomatoes, canned, liquid removed
- 1 c. Tomato sauce
- 1 tsp Chili pwdr
- 1/2 tsp Grnd cumin
- 1 tsp Salt
- 1/8 tsp Grnd chili (to taste)
Directions
- * May also use 1 can kidney beans. In a large skillet, brown grnd meat till no longer pink. Pour off excess fat. Add in onion. Cook and stir till onion is softened. Stir in beans, corn, tomatoes, tomato sauce, chili pwdr, cumin, salt and grnd chili. Heat till bubbly. Top with cheddar cheese.
- Serve on top of or possibly with Fry Bread.
