Chili Con Queso Dip
Ingredients
- 1 onion, minced
- 1 tomato, minced
- 1 bell pepper, minced
- 4 T oil
- 2 T flour
- 1 c. water
- 1 sm. box Velveeta cheese (Mexican style, optional)
Directions
- Saute first 3 ingredients in 2 tbsp oil. Set mix aside. Add in 2 tbsp oil and 2 tbsp flour to pan. Let thicken and bubble; add in water, stirring till well mixed. Add in vegetables and minced Velveeta cheese. Simmer on low - the longer it simmers the better it is. If it gets too thick, add in a little more water.
