  • Chile Con Queso Mini Bites

    Ingredients

    • 1/2 c. Minced Tomato
    • 1/4 c. Chopped Green Onions
    • 1 cl Garlic Chopped
    • 4 x Large eggs Beaten
    • 1/2 c. (2 Ounce.) Shredded Cheddar
    • 1/2 c. (2 Ounce.) Monterey Jack Cheese With Jalapeno Pepper
    • 1 tsp Chili Pwdr
    • 1/2 tsp Cumin, 1/8 teaspoon Red Pepper
    • 1 can (4 Ounce.) Minced Green Chiles Rinsed & Liquid removed Whole Green Chiles Sliced

    Directions

    1. Coat A Nonstick Skillet With Cooking Spray; Place Over Medium- Highheat Till Warm. Add in Tomato, Green Onions & Garlic. Saute/fry Till Onions Are Tender. Combine Tomato Mix, Large eggs, Cheeses, Chili Pwdr, Cumin, Redpepper & Minced Green Chiles. Stir Well. Spoon 1 Tablespoons Mix Into Minature Muffin Pans Coated With Cooking Spray. Bake At 425 For 8 To 10 Minutes. Or possibly Till Centers Are Set. Remove From Oven; Let Cold in Pans 1 Minutes.
    2. Loosen Edges With Knife & Remove From Pans. Serve Hot. Garnish With Sliced Green Chiles If you like. (Fat 2. Chol. 40.)
