Chickpea Salad
This is a wonderful salad to serve with Roast Chicken, or Roast Beef. Ingredients
- 250 Gr. Chickpeas, soaked overnight, cooked until well done, strained, and cooled.
- 10 Mint leaves, chopped fine
- 10 Large Basil leaves, chopped fine
- 1/4 cup olive oil
- 1 Red pepper, cut in small cubes
- 1 Red Onion, chopped fine
- 1/2 jalepeno pepper, (remove the seeds), chopped fine (for those that like a little hot, but can be eliminated)
- 1 Tomato, sliced thin
- Fresh Lemon juice, according to taste
- Salt, Pepper, to taste
Directions
- Mix all ingredients. Season with fresh lemon juice, salt and pepper according to taste.
- Serve room temperature.
